Sweet Potatoes are amazingly nutrient dense tuber vegetables. They are an excellent source of Vitamin A, Antioxidants, and Anti-inflammatory properties! Sweet Potatoes are also a good source of Protein, Potassium, Calcium, Vitamin C, Vitamin B-1, Vitamin B-2, Vitamin B-3, Vitamin B-6, Magnesium, and Dietary Fiber! And they are sooooo tasty!
Make a big batch and use these beautiful gems in salads, soups, rice bowls, tacos, and more.
Roasted Sweet Potatoes
3-5 Sweet Potatoes (I used Garnet variety)
Olive oil (other oils would be tasty as well. Maybe Grapeseed, Hemp, or Avocado)
Salt and Pepper
Preheat oven to 400 degrees.
Wash Sweet Potatoes in cold water and pat dry.
Cut into small cubes.
Place cubes on a baking sheet.
Toss with Olive Oil (or oil of choice) and season with Salt and Pepper.
Bake for 40-60 minutes, or until tender.
Remove from pan and serve warm.
Tonight these Roasted Sweet Potatoes were the star of our gluten-free, vegan tacos.
Corn tortillas with a little refried beans (we used vegan style), roasted sweet potatoes, fresh salsa, avocado, and topped with a little Romaine! Yum!!!
